Don’t be alarmed, but in case you didn’t realize this, it’s almost July. Summer is in full swing which means it’s whipped cream season! Wait, what? I meant berry season. Totally berry season. July 4th will be here before you know it and you’ll be grilling out, having ice cream, pie and fresh berries…all of which deserve a huge dollop of whipped cream. I made a super easy paleo version here to share with you. While it takes a little planning, it’s really quite simple and just as delicious as it’s dairy counterpart. There’s only three ingredients here and I’d be willing to bet you have all three in your pantry, so gather them up and get whipping. Happy 4th !!
Berries and Cream – Paleo Recipe
Yield: 1 cup
This super easy paleo version takes a little planning. With only 3 ingredients it is really quite simple and just as delicious as it’s dairy couterpart
Ingredients:
- 1 can full fat coconut milk, refrigerated overnight
- 1 teaspoon honey
- 1/4 teaspoon pure vanilla extract
Directions:
- Refrigerate the can of coconut milk (in the can) overnight. Chilling the coconut milk causes the fatty part of the milk to harden. This is the good stuff. The rest will be watery. Once chilled, open the can and scoop out the hardened milk into a bowl of an electric mixer. Dump the rest of the liquid – you don’t need that.
- Add the honey and vanilla and whip the coconut “cream” until fluffy and enjoy!
