This is one of my favorite recipes! Alright, now I am not a left-overs girl AT ALL. Won’t touch them! Buutttt… I make an exception with these Swedish Meatballs! They taste just as good the second and third nights as they do the first. So I always make extra so I won’t have to cook for a couple nights!

Alright, so start with a large pot and combine the meatballs, the cans of cream of chicken and cream of mushroom soup, and milk to thin your sauce. My frozen meatballs take 25 minutes to cook completely (check the instructions on your bag!) so I roughly let it cook covered on the stovetop on medium heat for roughly 30 minutes. Don’t forget to stir occasionally!

Alright, now to make your rice. I don’t have a rice cooker but know the secret to making perfect stovetop rice EVERYTIME. The ratio is 2 parts water to 1 part rice. So in this case, I added 6 cups of water and 3 cups of rice. This makes a lot of rice! Perfect for the large amount of meatballs I have. Add both the water and rice to a pot on high heat. Allow to come to a rolling boil. Then, turn the heat to low and cover. Stir occasionally. The rice takes around 15 minutes to cook.

And that’s it! With very little effort and approximately 30 minutes, you have a delicious meal that your family will request time and time again!

  • 2 Packages of Turkey Meatballs (14 oz)
  • 3 Cups Jasmine Rice
  • 6 Cups Water
