Cut the sweet potatoes into 3 inch long sticks, and toss them with oil. Mix the spices and salt and pepper in a small bowl, and toss them with the sweet potatoes in a colorful bowl.
Spread them out on two rimmed baking sheets.
Bake until brown and crisp on bottom, about 15 minutes, then flip and cook until the other side is crisp, about 10 minutes.
